Though you can peel, core and slice the apples by hand, for about $20 you can get a manual Apple Peeler/Corer/Slicer that makes this step MUCH easier. Either way you’ll want to peel, core, and slice the apples into about 1/4″ rings, sprinkle them with ground cinnamin, arrange on racks and dehydrate for about 4 hours, or till dry and crunchy. Store in re-sealable plastic bag.
