Be prepared as zucchini will shrink to about 1/4 of its original size and takes a relatively long time (12-16 hrs @160F). To prepare zucchini for the dehydrator –
- Slice lengthwise in half and peel
- If zucchini is large scoop out seeds/pith from center
- Slice in ~1/8th” strips/chips
- Toss with olive oil and kosher or sea salt
Easy on the salt. A little goes a long way since the zucchini shrinks so much. To me, these had a carmelized sort of flavor that tasted like French’s Onions without the batter coating.
